The Taste of Rural Turkey
Gozleme is one of Turkey's most beloved comfort foods, born in the villages of Anatolia where women would gather to roll paper-thin yufka dough, fill it with whatever was fresh — cheese from the morning milking, spinach from the garden, potatoes from the cellar — and cook it on a convex iron griddle called a sac.
The name comes from the Turkish word "göz" (eye), referring to the way the dough puffs up with "eyes" as it cooks. The result is crispy on the outside, soft and filled on the inside — a handheld meal that's been sustaining Turkish families for centuries.

At Istanbul Mediterranean 2, our Gozleme ($7.95) comes with six filling options: White Cheese, Mozzarella, Potato, Spinach and Cheese, Ground Beef, or Eggplant. Each is prepared with hand-rolled dough, filled generously, and cooked until golden and crispy on both sides.
