Menemen takes its name from a small town near Izmir on Turkey's Aegean coast. The dish is beautifully simple: eggs are scrambled in a pan with sauteed tomatoes, green peppers, and onions, seasoned with Turkish red pepper flakes and a touch of salt. It's cooked in a shallow copper or cast-iron pan and served sizzling, with crusty bread for dipping.
The great Turkish debate? Whether menemen should include onions. Purists from the Menemen region insist on no onions. At Istanbul Mediterranean 2, we include them — and we're not sorry. The sweetness of caramelized onions adds depth that makes our version irresistible.
