The Iskender Kebab was created by Iskender Efendi in the northwestern city of Bursa during the 1860s. His innovation was deceptively simple: take thinly sliced vertical-spit doner, lay it over pieces of fresh pide bread, ladle on a bright tomato sauce, add a generous dollop of creamy yoghurt, and finish with sizzling melted butter poured tableside.
The result was an entirely new category of Turkish cuisine — a dish so perfect that it became the signature meal of an entire city. To this day, Bursa restaurants serve Iskender on sizzling copper plates, and families make special trips just for this one dish.

At Istanbul Mediterranean 2, our Iskender Kebab ($26.95) is prepared with care that honors the original. We slice our fresh beef and lamb doner over warm, oven-baked pide bread, top it with our house tomato sauce, add a generous swirl of thick yoghurt, and finish with melted butter.
