Lahmacun — literally "meat with dough" in Arabic — was born in the kitchens of Gaziantep and Şanlıurfa, where centuries of spice-trade culture created one of Turkey's most iconic street foods. Unlike pizza, lahmacun is rolled impossibly thin, spread with a fragrant mixture of hand-minced lamb or beef, tomatoes, peppers, onions, and a proprietary blend of spices, then fired in a blazing stone oven for barely two minutes.
The result is a crispy, almost cracker-like base with an intensely savory topping. Turks roll it around fresh parsley, sumac onions, and a generous squeeze of lemon — eating it by hand, standing at the counter, or gathered around a family table.
